This new Salt Lake City bakery satisfies that late-night craving for brownies — and our desire to do good

When Molly Kohrman left her job at a nonprofit to start a food business, she was determined to find some way to continue to help charity organizations.

Enter Brownies! Brownies! Brownies!, a new Salt Lake City bakery where the majority of the menu is — you guessed it — brownies, and 1 percent of sales are donated to a local nonprofit.

The Spice Kitchen Incubator, an organization that helps refugees build their own food businesses, will be the nonprofit recipient for the final months of 2018 and all of 2019. Kohrman plans to choose a different charity in subsequent years.

The shop, at 1751 S. 1100 East, opened in late October and since then has collected $2,000 to give the Spice Kitchen, she said. “It was important for me to give back to the community.”

Kohrman, who grew up in Philadelphia and attended pastry school in Washington, D.C., has spent the past few years in catering while she perfected her brownie recipe.

The menu at Brownies! Brownies! Brownies! features brownies and blondies, in a rotating list of flavors. This week for example, there are Rocky Road, peppermint, peanut butter, churro and Butterbeer for fans of Harry Potter books and movies. Depending on the flavor, the brownies are dressed with a variety of toppings such as gooey caramel or whipped ganache as well as nuts, candies, sprinkles or a chocolate drizzle.

Guests also can get ice cream, hot chocolate and gluten-free options. A vegan recipe is in the works, Kohrman said.

Brownies are sold in three-, six- and 12-piece boxes for $8, $16 and $30, respectively. Larger amounts also can be ordered.

The store currently is open Wednesday through Thursday, 2 to 10 p.m., and Friday and Saturday, 2 p.m. to midnight, but the hours will change after the holidays.

Delivery services soon will be available with a minimum order of $8. When that happens, Brownies! Brownies! Brownies! will become the newest twist on the late-night cookie delivery trend.

The menu is only one part of the new shop, Kohrman said. “I really wanted to create a place in Salt Lake City where people could gather.”

The space has a year-round patio with a fire pit to warm hands during the winter. On Friday nights, food trucks gather in the parking lot, she said. “It’s a place where people can come after movies or shows and just hang out.”

And, of course, eat brownies.
