Letter: Conflict of interest? Cox’s personal farm in Fairview produces ‘mostly alfalfa’

It is well established that the serious water problems in Utah and for Great Salt Lake are in conflict with the amount of water in this state going to farming (around 70% of the state’s total water usage) and, largely, alfalfa farming.

A significant percentage of that alfalfa is then being shipped out of the country to supply cattle ranchers outside of the United States, in particular, China.

We currently have a governor who, unceasingly, supports the continuation of this use of our water, to our great detriment. What appears to be a serious conflict of interest, which could result in a catastrophic situation for all residents of Utah, is this governor’s personal real estate holdings and business interests.

Most Utah residents are aware of Gov. Spencer Cox’s personal farm in Fairview, but are they aware that the Cox farm produces “mostly alfalfa, some barley, some hay” (direct quote from Cox’s Jan. 4, 2021 interview with KUTV)?
