$ 19.95 • It's possible to find fresh fish in the land-locked central Utah town of Beaver. Joe Williams, a culinary school graduate who runs the Timberline Inn restaurant with wife Andrea, ships in king salmon and other fresh fish four times a week. The dinner comes with house-made mashed potatoes and asparagus topped with a white wine shallot butter. Not much for fish? The restaurant, just off the I-15 exit, has prime rib on Friday and is one of the few places that still serve liver and onions.
