As budgets tighten, nutrient-rich fresh fruits and vegetables often get ejected from the grocery cart in favor of cheaper, more filling food choices.

With one in seven Utah households grappling with food insecurity, Utahns Against Hunger devised a way for community and backyard gardeners to routinely share the wealth of their harvests.

Aptly dubbed Grow A Row, the initiative encourages planting an extra row of produce for donation. Utahns Against Hunger, an advocacy group focused on creating the public and political will to end hunger in the state, includes a list of area food pantries where donated produce are welcomed.

"When you have more from your garden than your family can eat, you can help fight hunger in our community," Sara Crowder, an AmeriCorps VISTA member working with Utahns Against Hunger, said in a recent statement.

Westminster College's organic garden will be among the donors.

"We're really excited to be participating in Grow A Row," Alizabeth Potucek, co-coordinator of Westminster's garden, said in the statement. "We want to help provide those who need it with access to fresh, healthy food."
