Franchise donates to Shriners Hospital as it opens Utah restaurant

As a restaurant franchise specializing in breakfast and lunch moves into Utah, it is also giving to charity.

When The Egg & I opened its second Utah restaurant at 10555 S. Redwood Road in South Jordan Monday, franchise owners Kade and Kalli Huntsman donated $4,200 to Shriners Hospital for children. The franchise also raised $7,200 for the hospital when it opened the first Utah location in Holladay. The company will open another location in Draper this May and five more locations within the next five years. Each restaurant opening will continue to hold a private, pre-opening fundraiser training day to benefit Shriners Hospital for Children.

The Huntsman’s 10-year-old daughter Berrett was born with only one arm. Since birth, Berrett has received treatment at Shriner’s Hospital for Children where she has worked with the occupational rehabilitation team to learn how to grow and succeed with her limitation as a normal child. The hospital had a special violin made for Berrett, which she is now learning to play.

"Our family has been so fortunate to have personally benefitted from the amazing, compassionate care at Shriners Hospital for Children, and they were instrumental in providing the occupational instruction our daughter needed as she grew," said Kalli Hunstman. "Shriners Hospitals for Children provides much needed support and care for children and their families that are suffering from a special health care need in an environment that serves the entire family. We wanted to come up with a way to give back to the hospital for all they have done for our family and so many others."

The Centennial, Colo., Egg & I Restaurants opened its first restaurant in Fort Collins, Colo., in 1987. The South Jordan franchise is the 90th restaurant located in 19 states throughout the U.S. It is open Monday through Friday until 2 p.m. and 2:30 p.m. on weekends.
