Food briefs: Fleming's beer dinner, local Chef War battles over chicken, and a Labor Day Luau

Chefs battle over poultry

In the next edition of the local culinary competition, Chef War, two well-known Utah chefs — Peter Sproul, with Chef's Table in Orem and Mark Shoup of Zoom in Park City — will go pan-to-pan in "Battle Chicken." Each chef will prepare three different chicken dishes for guests to sample and judge. Produced by sushi chef and "Survivor" contestant Jonas Otsuji, the evening also includes a raffle for food and restaurant prizes.

Food, beer and cheese

Chef Matthew Lake of ZY Food Wine and Cheese pairs with Wasatch and Squatters Brew Pubs for two nights of food, beer and cheese.

Wine dinner at Faustina

Faustina hosts a four-course dinner, paired with wines from Cline Cellars, a California winery that specializes in Rhône-style wines and produces seven different Zinfandels. Winery representative Charlie Cline will be on hand to discuss the wines and answer questions. Chef Billy Sotelo's menu includes house-cured salmon appetizer, miso-roasted black cod, hangar steak and frozen date cake.

Labor day Luau

Take a trip to the islands during Thanksgiving Point's annual Labor Day Luau. The outdoor event starts with a Polynesian-style dinner of fresh fruits, salads, steamed rice, Kahlua pork and grilled teriyaki chicken, juices and coconut-banana cupcakes. After-dinner entertainment includes a Keiki fashion show, Samoan fire performances, cooking demonstrations and a luau.

Z'Tejas Chile Fest

Celebrate the chile pepper harvest at Salt Lake City's Z'Tejas Southwestern Grill during September. The restaurant's special Chile Fest menu includes a variety of appetizers, entrees and cocktails featuring Hatch chile peppers from New Mexico. Look for chile onion rings, chicken and crab rellenos, green chile sopes and Peach Fever, a cocktail made with tequila, peach puree and a housemade jalapeno syrup. For every entree ordered during the 19-day event, Z'Tejas will donate $1 to the University of Utah Burn Center to help send survivors to Burn Camp. On Saturday, Sept. 8, local firefighters will compete to see who can eat the most chiles.
