Enjoy a four-course dinner and learn about biodynamic wines on Friday, Feb. 24, at Faustina, 454 E. 300 South, Salt Lake City. The dinner begins at 6:30 p.m. and costs $35 per person. Optional wine pairings are an additional $20.

Katrina Fetzer, from Ceago Biodynamic Wines, will talk about the self-sustaining vineyard in Clear Lake, Calif., that uses compost, crop rotation and animals to improve the soil and plants and ultimately grow better grapes for wine.

Executive Chef Billy Sotelo has created a special four-course menu to complement the Ceago wine selections. The menu and pairings include:

• Open-faced shrimp ravioli, with chardonnay reserve

• Red pear salad with blood orange vanilla vinaigrette, with syrah rose

• Pleasant Creek hangar steak with Italian kale, celery root puree, with cabernet sauvignon

• Roasted apple tart with honey vanilla gelato, with muscat
