Potato gratin with Corsica cheese
Note: Serve this dish with a green salad.
Olive oil for drizzling
2 1/2 pounds potatoes, peeled and thinly sliced lengthwise
1 wheel Corsica cheese, thinly sliced lengthwise
1 bunch fresh thyme sprigs, leaves removed
6 slices of prosciutto
12 slices bacon
1 large yellow onion, minced
Salt and freshly ground pepper
Freshly ground nutmeg
Heat the oven to 350 degrees.
In a gratin dish, lightly drizzle the bottom with olive oil. Place a layer of potatoes in the bottom of the dish. Season with salt, pepper. Grate the nutmeg, then sprinkle over some thyme leaves.
Sprinkle onions over the potatoes. Place two slices of prosciutto and four pieces of bacon. Repeat two more times, ending with the cheese.
Bake for 1 1/2 hours.
After 1 hour, place a piece of aluminum foil over the dish so the cheese does not burn.

What it is » A pasteurized sheep’s milk cheese from northeastern Corsica, France. The 8-ounce wheels have a white, bloomy rind and an ivory white interior with irregular holes. The paste is soft, even a tiny bit rubbery, and the taste has a subtle grassiness to it. The wheels are aged for two months in caves.
How to store » Store Corsica in its original dual-waxed wrapping in the refrigerator for up to 1 week. Prior to serving, let it sit at room temperature for at least 20 minutes.
Serving ideas » Serve on a cheese plate along with slices of crusty bread, roasted unsalted almonds and dark, dried figs such as Mission or Brown Turkey. Or use in a recipe, such as a potato gratin (see recipe).
Beverage pairings » White wine such as Vermentino, red such as Merlot.
