Murray • For more than a decade, Wriggles restaurant quietly operated inside the University of Phoenix building in Murray, keeping its wraps — made with a soft flat bread — under wraps.

Only students, faculty and building employees were privy to the restaurant, known for sticking one end of each prepared wrap into a small plastic cup to catch any filling that might slip out.

In November, when Intermountain Healthcare, the landlord, did not renew the restaurant’s lease, owner Mike Kaleel moved Wriggles to a new location at 43 E. 5900 South.

The "wrap in a cup" is located closer to the shopping area near the Fashion Place Mall. It is tucked behind the 7-11 convenience store on the corner of State Street and 5900 South, however, which means it’s still a hidden treasure.

"We’ve been hidden wherever we’ve been," said Kaleel, who operates the restaurant with the help of his sister and lead "wrap artist" Katherine.

Their parents, Jack and Connie, started the business — which was originally called Kaleel’s — about 13 years ago in the Cottonwood Mall.

When the mall started to decline, the family moved the restaurant to the University of Phoenix and renamed it Wriggles — which in French means a twist or roll.

The Kaleels are Lebanese and use an adapted family recipe to make the flat bread — which should not to be confused with a tortilla.

"We grew up on this bread," said Katherine Kaleel. It is made fresh every morning using only flour, salt, sugar, yeast and water — no lard, shortening or preservatives.

It is used to create signature wraps such as the turkey bacon guacamole with cilantro-lime dressing. Customers also can create their own wrap, choosing from a large selection of freshly roasted meats, cheeses, vegetables and house-made dressings and spreads, including a creamy hummus.

Mike Kaleel said the restaurant, which also does catering, has been selected as a food vendor for University of Utah football games this fall, which, after all these years, will allow a whole new audience to discover Wriggles’ wraps and hummus.
