For a few months in the summer, Centro Woodfired Pizzeria owner Mark Baruffi buys fresh figs from a farm in Toquerville for a fig and prosciutto pizza. The sweet figs, salty prosciutto and creamy blend of fontina and goat cheeses is delivered on a thin crust that's been cooked at about 800 degrees in an imported Italian woodfired pizza oven.
