The pan-seared sea scallops entrÃ©e at Jasoh! in Ogden was the perfect example of how to correctly caramelize this lean protein. Topped with a browned butter and moscato gastrique on a parsnip puree as a base, the dish is finished with roasted brussels sprout leaves and cashews. An excellent dish for a warm summer evening.
