If you like sashimi, you’re likely already a fan of ceviche, the raw fish dish with fresh seafood cut into bite-size pieces and marinated in tiger’s milk, then seasoned with spices and peppers. The Cebiche Tasting at Del Mar offers a sampling of three ceviches: Cebiche Clásico, the classic taste profile with potatoes and large-kernel Peruvian corn on the side; Cebiche Chifa, with crisp tortilla strips and crunchy corn nuts; and the spicy Cebiche Aji Amarillo.
