$19.95 • Carbonara is perhaps the most impossible culinary dish to cook well. At Sicilia Mia, fresh spaghetti noodles are prepared in the kitchen with pancetta and an egg mixture and then finished in a half-wheel of Parmigiano-Reggiano either tableside or in the center of the dining room. Dishes are artfully garnished with a swirl of balsamic and a flourish of parsley before the star pasta is twirled around in the flaming cheese wheel and then placed in the center of the bowl. Thin shaves of Reggiano carved from the wheel are placed on top of the pasta before serving. A richer, more decadent dish can't be found in Millcreek.
