The PLT: Pancetta, lettuce and tomato sandwich, $7

Caffe Niche, 779 E. 300 South, Salt Lake City; 801-433-3380. Open Tuesday through Friday, 7 a.m. to 4 p.m.; Saturday 9 a.m. to 4 p.m.; and Sunday, 9 a.m. to 3 p.m. Closed Monday.

The classic American BLT gets an Italian twist at this new corner cafe, once a laundromat and vintage clothing store. Imported pancetta, arugula and balsamic-roasted tomatoes are served on fresh, Utah-made ciabatta. A spread of house-made lemon mayonnaise adds a nice citrus tang. It is served with fresh salad greens, or upgrade to one of the cafe's other unique offerings, like green olive salad.
