For those who need some sort of association to envision the pairing of Asian-inflected beef in a corn tortilla, think of carne asada. The carne in this case is small chunks of beef, marinated with garlic, herbs and chile peppers. After a good sear on a stove top, the meat is swaddled into two soft and warm corn tortillas. Chef Roseanne Ruiz then adds texture and visual interest by topping it with an Asian slaw of julienned cabbage and carrots in a zingy vinaigrette. Crunchy wonton skins top the lot.
