Fry sauce is one of Utah's original foods. This unique mixture of ketchup, mayonnaise -- and supposedly buttermilk -- is a favorite on french fries, hamburgers and sandwiches.
When Brewvies -- a movie house/restaurant/pub -- opened in Salt Lake City, the owners took the Utah fry sauce idea and kicked it up a bit creating their popular "chile mayo." The recipes has red peppers, jalapeño, cayenne pepper and chile powder.
"It's been a staple here for 10 years," said kitchen manager D. Wayne Shipley, who shared a scaled-down version for fans.

Russ Snyder would like a recipe for the hot dog buns, similar to those made at the Kress Five and Ten, on Salt Lake City's Main Street, some 40 years ago. Snyder also is also searching for two recipes from the old Harmon's Cafe (now KFC) on State Street. He wants the dinner rolls and the sauce for Slim Jim sandwiches.
Jeff Smith would like the recipe for chicken enchiladas , like the ones served at the now-closed La Paloma Restaurant.

1 red bell pepper, roasted, peeled and sliced*
1 clove garlic
2 tablespoons fresh lime or lemon juice
1 jalapeño pepper
1 (16-ounce) jar mayonnaise
1 tablespoon cayenne pepper
2 to 3 tablespoons chili powder
Dash of freshly ground black pepper
Place red pepper, garlic, lime juice and jalapeño in food processor. Purée. In a mixing bowl, combine puréed mixture with mayonnaise, cayenne pepper, chili powder and black pepper. Mix until ingredients are well incorporated. Chill for several hours before serving with french fries or as a spread on hamburgers and sandwiches.
*1 cup bottled red peppers can be used as a substitute.
