Impeccably sourced pork, with the perfect ratio of fat to lean, is served at Ikigai with a slightly sweet, miso-infused sauce that highlights the meat's subtly smoky flavor. It's topped with chunks of pickled radish that lend a tangy counterpoint to the sweet, and crowned by a tangle of green onion. This is a whole new level of bar food.
