Utah's dining scene is never static.

In the past month, new Greek and Japanese restaurants have opened in Salt Lake City and West Valley City, respectively; there's a place to get healthy chicken in Holladay; and a veteran Utah restaurant owner has decided to expand to Ogden. Here are the details:

Greek in the City

Manoli's specializes in Greek small plates or meze — short for mezethakia. Chef/owner Manoli Katsanavas, whose aunts, uncles and cousins own Utah's popular Crown Burger restaurant chain, offers traditional favorites such as vegetarian dolmathes (stuffed grape leaves) and cheese-filled triangles (tyropitakia). But he expands the often-limited view of Greek cuisine with offerings such as yemista (stuffed piquillo peppers), htapodi (charred octopus) and arni pisto (lamb sliders). In addition to small plates, there are larger chicken, fish and steak entrĂ©es, salads, sides and desserts. The restaurant, just west of the Southeast Supermarket in the 900 South Liberty Park neighborhood, also serves wine, beer and cocktails.

Japanese in West Valley

Mizu specializes in sushi, sashimi and traditional Japanese-style kitchen food, including teriyaki, noodles, tempura and rice bowls. Chef Ito Young, who previously worked at Hatsuhana in New York, brings fish from all over the world for his menu. Diners get 20 percent off all menu items on Monday, Oct. 26, to celebrate the restaurant's recent opening.

Health conscious in Holladay

Skip the fatty hamburgers and fries and get healthy grilled and rotisserie chicken at Rustic Chicken, which opened recently in the new Canyon Slope Square at the base of Big Cottonwood Canyon. Cage-free with no added hormones, the chickens can be purchased in various sizes: whole, half or quarter. There also are salads, soups and sides, including fingerling potatoes, sweet corn salad, and grilled pineapple red quinoa pilaf. Vegetarian options available.

Pago goes north

The Pago restaurant group soon will be adding a fifth restaurant, taking over Rickenbacker's Steak House in Ogden. Several months ago, the Rickenbacker owners approached Pago owner Scott Evans about joining forces. A deal was completed in early October. Evans said Rickenbacker's will remain the same for a few months while his team develops a new concept, which should launch early next year. This will be Evans' first venture outside Salt Lake City. He currently owns and operates Pago, Finca, Hub and Spoke and East Liberty Tap House.
