Bistro 222, which opened last week in the lobby level of the Goldman Sachs building on Main Street, is currently working to be Salt Lake City’s first LEED certified restaurant.
Businesses that earn the Leadership in Energy Efficiency and Design certification have met strict standards for sustainable design, construction, operation and maintenance.
While costly and challenging, getting the certification “will provide long term operational benefits,” for the restaurant, said owner Steve Pruitt with Equiwest Hospitality. Equiwest also operates Boulevard Bistro, 1414 Foothill Blvd., and Toscano Italian Bistro, 17 E. 11400 South, Sandy.
Bistro 222 serves an eclectic menu of house-made pastas, steaks and seafood as well as an express lunch that includes sandwiches, salads, soup and pizza.
Unique offerings include steak trim and pork belly burger with fried egg, house pickle and tomato jam ($15), roasted beet gnocchi with brown butter and Brussell sprouts ($17) and the Hangover pizza made with Creminelli pancetta and house ricotta $12.
