Provo-based New Grains Gluten Free Bakery is seeking $200,000 through Kickstarter to create what it says would be the first exclusively gluten-free culinary institute in the United States.
Students would be taught how to cook without wheat, barley or rye — which contain the protein that some people are sensitive to. They’d also learn how gluten affects the body. Plans also call for a bistro that would be run by students and staff and be open to the public.
Backers hope to open a 3,000-square-foot facility, with a groundbreaking in June. They must raise the money by April 15 to receive the Kickstarter cash. Rewards for donating range from a gluten-free menu plan and recipes to attendance at the grand opening and gluten-free “coaching” sessions.
